Hatchery
Eggs collected from certified broodstock, incubated in pristine spring water with monitored survival rates.
Juvenile Growth
Fingerlings introduced to open rearing pools. Diet, temperature, and flow rates are adjusted seasonally.
Maturation
Adult sturgeon develop roe sacs. Annual ultrasound checks track maturity. Only 7-year fish are selected.
First Harvest
Roe hand-extracted, rinsed, graded, lightly salted (malossol), and packed within 48 hours of harvest.
